La visita guidata dell'acetaia è stata molto interessante, il Sig. Pedroni Giuseppe *** ci ha spiegato tutto in modo semplice e completo nei dettagli. La location è infallibile, tutto bene ordinato, con attorno un bel giardino.
Anche il pranzo è stato ottimo, un menù dove si potevano scegliere portate con o senza aceto balsamico, in modo da accontentare tutti. Io chiaramente le ho prese tutte con aceto, molto buono !!!

We visited this amazing facility in April 2022, and had a tour by Guiseppe the current owner. He was so knowledgeable and gracious, allowing us to visit his farm, educating us about the process of making balsamic and giving us tastes of the different aged balsamic vinegars, which were absolutely delicious. I’m so glad we got to visit this beautiful place.

Location infallibile : un bel giardino che circonda la zona pranzo e rende fresco e piacevole intrattenersi.
Menù ricco e curato con proposte tipiche tradizionali.
Servizio impeccabile e accogliente.
Possibile acquistare nel negozio adiacente prodotti sopraffini provenienti dall'acetaia situata a fianco.
Aceto balsamico naturale di diverse età...degno di nota.
Trattati benissimo siamo stati proprio bene e abbiamo mangiato divinamente.
Vini tipici della zona da assaporare...
Tornerò presto!@

While on a 2 week trip to Italy, I took the train from Venice to Modena to visit Pedroni Acetaia. It was a 15 minute taxi ride from the Modena train station but was well worth it. Family run balsamic vinegar producer that has been doing this since 1862. Wonderful tour followed by a balsamic tasting lunch at their restaurant Osteria di Rubbiara . Meal capped off with vanilla gelato with drizzled 25 year old balsamic vinegar. Best dessert of my life.

My words will not give Pedroni the honor it deserves but I'll try. We arrived earlier than our booked tour, by 1.5 hours... let me explain. We were more than happy to sit in the garden even on a 90+ degree day just to be at Pedroni! The respected patriarch of the family, "The Boss," Signor Giuseppe, I pray I got that right, was not happy and he looks unhappy with everything, don't take offense, it's his way. The family moved jobs around a bit to give us an impromptu tour which we tried to say that we could wait for the scheduled one. The family does all of the jobs at the store, farm & restaurant, please be respectful.

At 1st, we were treated as rude tourists, which we deserved, we arrived very early. As our interest was clearly noted, our tour instantly became intensive & very special. This family and their friends are passionate and proud about their product. The beginning family barrels are 100+ years old!!! Absolutely beautiful! We had the opportunity to taste ALL of the Balsamico produced down to the 100 year old Extra Vecchio "Cesare." Unforgettable! We were at the end of lunch service but there was enough for us to lunch un-reserved! 1st of all, no cell phones, no photos! Lock your phones & cameras up! Enjoy the meal, the moment, the experience! For those before who didn't & took photos, shame on you!!!

The pasta is handmade fresh in the morning with special techniques unique to the area, just beautiful. The meal that you are presented with is the family's typical Sunday lunch, a very special occasion. Our 4 course meal started with a soft as silk tortelloni-type pasta filled with ricotta topped with a generous drizzle of balsamico. Creamy ricotta balanced the acidity.

2nd, a dish of pretty freshly made pastas that were rolled onto a comb-type tool to give the fine texture of grooves. Topped with a slow cooked ragu /meat sauce. This ragu was nothing like I've ever tasted before! I've eaten & cooked many a ragu! Mostly meat, both pork and beef but without the high pitch of seasoning or tomato. True flavors. We were told that no ingredients or technique has been shared other than what I just wrote. Incredible.

3rd, small roasted meats with a side of potatoes cooked with bacon. These weren't just roasted meats... They were perfectly roasted, unseasoned, yet tender bits of spare rib & chicken. I've never had roasted meats so flavorful, non fatty & tender! No words. Cooking techniques & recipes are not shared, even with their friends! The potatoes. Not "just" potatoes. Flavor bites that screamed "Delicious"!!! Just wow!

The ice cream is made nearby with a special recipe just for this meal! Extra egg yolks are added so the color is darker and the flavor is a little stronger to pair well with the balsamico. You cannot, not finish this! Unbelievable!

Along with dinner, you have a bottle of Lambrusco frizzante made by the farm. Excellent, even on a ridiculously hot & humid day in July. To finish dinner, the apertifs are brought out. We wet our lips with each to taste. I have to say though, the herbed liquor settled my oh so full tummy! & then wake up with a crazy smooth espresso made from a beautiful copper espresso machine form the 60's!!!

Arrive hungry, leave beyond satiated! We were last to leave as the place had cleared out. We were finally told "finito" by the Boss. I thanked the cooks for their unbelievably delicious meal through tears, yes, I cried... All of that was made with love!!!

This is where the true magic started to happen. We came for an experience and received it but we also came for a piece of history. The wine made on the farm is phenomenal in all varieties available. We were given a taste of the entire batterie in-store along with his prized gold seal awarded aged walnut liquor. So smooth with a vibrant, rich flavor. To be fair we were already committed to purchasing the beautiful cherry-colored box containing "The holy grail," ABTM Extra Vecchio "Cesare" 100 year old balsamico! As their brochure says, "It is the ideal choice for those who consider experience a virtue."

We explained that our two teens chose to stay in the ac cooled Airbnb with wi-fi while we were out for the day. Ridiculous! In the end, "The Boss" asked us if We wanted a photo with him! His sour, serious face turned into the biggest smile I will never forget! A photo which I'm not sharing, we earned that one! We left that day with our hearts & tummies beyond full. Our trunk had an extra section just for the incredible products made by the dedicated Pedroni family. An experience of a lifetime along with a piece of history that we can pass down to our generations!!! We say, Thank you! Grazie Mille!!!

Atendimento pelo senhor, provavelmente o proprietário, foi, no mínimo, grosseiro. Totalmente sem paciência, sem simpatia e sem tato para clientes que estavam alí para viver uma bela experiência.
Aconselho à Acetaia Pedroni que, se não estão dispostos à oferecer um atendimento à altura das pessoas que recebem, melhor restringir seu ramo de atividade somente à produção do aceto balsamico, deixando a receptividade ao público para outros estabelecimentos que oferecem cordialidade e uma experiência positiva para os visitantes. Totalmente insatisfeitos com tamanha falta de cortesia e receptividade.

Buona cucina e buon servizio il tutto coordinato dal proprietario sig. Pedroni che da sempre caratterizza il suo locale con battute e "richieste" che non sempre vengono accettate dai commensali . Rimane comunque una trattoria dove si mangiano piatti di alta qualita' .

We were here for a private tour to learn about the process of making Balsamic vinegar. We had seen this place featured on Anthony Bordain's show and were so excited to visit. We had a great tour and were able to taste several versions of balsamic aged anywhere from 12-25 years. After our tour we had a fantastic lunch that incorporated balsamic into each dish. The pasta was amazing! We had vanilla gelato for dessert drizzled with 25 year old balsamic. It was so good! Who needs chocolate sauce after tasting that. The family and staff were wonderful! I have already recommended the tour and tasting to many of my friends. So glad we brought some of the fabulous product home!
